The tambourine, with double rows of jingles, is played in the traditional hand-drumming style found in the Middle East–centuries old and still used today.
Sometimes a string drum is used instead, which is a resonant box with strings stretched across and attached at both ends. These strings are tuned and then hit with a stick, like a drum.
The pipe and tabor is a combination instrument: one hand plays a three-hole whistle flute (overblown to access more notes), and the other hand plays a tabor drum.
